A USEFUL BOOK

A technical book dealing with every scientific system of testing milk 'and cream ha 9 just been issued by the New South Wales Department cf Agriculture. As a plain and copious hand-book, for both the farmer and the oxpert, this publication cannot be excelled. It is the work of Mr M. A. O’Callaghan, chief of the Dairy branch of the Department, and is a credit to this gentleman’s bookcraft as well as to h(s expert knowledge. There are exhaustive tables showing the amount of butter obtainable from any given quantity of cream testing between 20 and €0 per cent, of butter fat; a table for the use of factory managers, showing the amount of butter obtainable from lOOlbs ,of cream, whether the samples are weighed or measured; a chart similarly showing the amount of butter obtainable from any given quantity of milk; and, conversely, a table showing the amount of milk required to make lib of butter, allowing for loss in separation. Bach recognised system of testing is explained fully, and directions are given for their use. The price of the book is 2s 6d net, and it can be obtained from the department publishing it.
