HOUSEHOLD.
German Plinsen. — General directions— Four tablespoonfuls of flour, four eegs, 2oz of wariped butter, a little Balt,a tablespoonful of sugar, and half a pint of cream or lukewarm milk enough to make a thin batter ; stir this well. Fry pancakes exceedingly (.bin, a pale brown on both sides. Lay one ou the other, with sugar and cinnamon, or other spice, between. Strew sugar plentifully over, the top one, and glaze it with a salamander or other red-hot iron.-—Plinsen with Fruit—To the above batter add 2oz of currant's, well-washed in hot water, and half a lemon peel grated, Use very little butter or lard in.frying the plinsen. Spread over each one a thin layer of preserved or stewed fruit. Roll them up. Lay them close together in a dish, sift sugar and cinnamon over, and serve with sweet sauce. Potato Salad.— As all the recipes for potato salad begins by saying ‘ Take cold boiled potato,’ a German lady has asked me to send the following for publication : The first ne cessity is to have the potatoes perfectly hot before they are sliced and placed in the liquid, otherwise the absorption will not take place properly. The liquid should consist of equal parts of oil, vinegar, and boiling water, with pepper and salt to taste, and a few.capers, or chopped parsley, or chopped anchovies,, or a little onion may be added with advantage. The salad ought to stand a few minutes in front of the fire, to aid tha absorption of the liquid. It is, of course, to be eaten cold, but should not be kept too long before use. To make a mixed salad, sliced beetroot, tomatoes, French beans, or any other fresh vegetable may be added. Cucumber Relish, —This pickle may bo made from those cucumbers which have grown tooTarge for piokling whole. Peel, cut in half, remove the seeds, and grate on a coarse grater; drain the water from the mass, season highly with pepper, salt, and ground cloves, cover with cold vinegar, bottle and seal. Orange Cream. — Take one lemon and two oranges and grate; add one cud of rice, thick cream ; boil, beat in three eggs with the lemon and orange. Let thicken and set on ice to cool.
