NEW ZEALAND CHEESE.

Says the Trade Protection Gazetco ; A correspondent who lias taken special care to obtain reliable information as to the prospects of the New Zealand cheese trade has favored, us with the results of his investigation ; and as they are of importance 1 to many of our subscribers we have pleasure -in making them public. It appears that 25 per cent of the total quantity of this season’s production has been already shipped to London, and that from various causes the output this year is about 25 per cent less than it was last year. The orders from Australia aro far in excess of what can be forwarded at present, the result being that there is really very little matured cheese in the Colony. This being the case there is every probability of a material increase in value almost immediately, and it appears certain that holders of prime cheese wift ba able to realise remunerative prices by withholding their stock from the marketjfoT ashort time. Returns have not been obtained from several factories'in tho North Island, but it is not. thought that anything they hold can materially alter the prospect. There is no doubt a large supply of cheese in the hands of farmers, but as a rule it is of inferior quality, which renders it unfit for the foreign markets. We believe that the amount of cheese in Canada and the United States available for the English market is also limited this year, and this should further increase the demand for and enhance the price of good New Zealand cheese.
