PROCESS EVOLVED SEARCH FOR NEW CONTAINER (0.C.) PALMERSTOJ XORTH, Monday The fact that New Zealand is now sending dehydrated butter overseas was mentioned by Professor W. Riddet, director of the Dairy Research Institute. to-day. A little less than a year ago Britain asked for a trial shipment of dehydrated butter. Other shipments followed, each being an improvement, until finally a process was evolved whereby the butter could be dehydrated to its pure fat content and transported at ordinary temperatures on board ship, provided it was not touched by light or air. Dehydrated butter is not equal to best grade table butter, but it is better than margarine. A commercial plant is now being established. Research is also being undertaken with a view to displacing tin containers now that supplies from Malaya are not available. It is believed success will also be met in that direction. The dehydrated product is mixed with water and salt to become normal butter again. Professor Riddct also indicated that the drying process was being extended to vegetables.
