VI-MAX XMAS RECIPES These recipes, which have been used by thousands of women with success in past years, were contributed by Mavis Larcombe, the Christchurch Gas Company's well-known culinary expert. VI-MAX XMAS PUDDING Soz VI-MAX. 3oz white Hour or fine wholemeal. 2oz breadcrumbs, 6oz suet, 4oz currants, 4oz sultanas, 4oz seeded raisins, 4oz brown sugar, J teaspoon nutmeg, 1 teaspoon spice, 1 desspn. treacle, 2oz almonds, loz peel, \ teaspoon salt, 1 level teaspoon soda, 4 tablespoons milk, 2 eggs. Method : Prepare fruit and mix with all dry ingredients. Mix with beaten eggs in which the treacle has been dissolved. Add soda dissolved in milk and put into a greased basin. Cover and steam at least 4 hours. Mrs A.W.H. writes : "We are big caters of VI-MAX and 1 find it better than any cereal I have ever had. I first used It when the plum pudding and Christmas Cake recipes were In the paper. I made both and they were the last word in perfection. Everyone asked for the recipes." VI-MAX XMAS CATKE Jib butter. Jib sugar (light brown), 6 eggs, ilb VI-MAX, ilb white flour or line wholemeal. lib seeded raisins, Jib sultanas, Jib currants, jib almonds, ilb cherries. 31b peel, 1 tablespoon spice, 1 desspn, cinnamon, 3 teaspoon nutmeg. Grated rind of 1 lemon, 2 tablespoons wine or brandy. Method : Cream butter and sugar, add beaten eggs alternately with sifted flour and VI-MAX. Add prepared fruit and lastly brandy. Beat well; bake in greased tin for 3J hours In the above recipes coarse or fine VI-MAX may be used. Both grades of VI-MAX are sold by all stores in 31b packets and 71b bags. VI-MAX is made by the makers of VI-BRAN and VI-MEAL.
