VITAMIN C IN CABBAGE Experts agree that at least one raw and one cooked vegetable should be included in the daily diet. Haw cabbage, shredded and served with dressing or salt, is nutritious and delicious. It combines well with other raw vegetables such as carrots and celery. Cole-slaw made from shredded raw cabbage Avith dressing is an excellent accompaniment of fish, fowl or meat. Cabbage is perhaps most often eaten as a cooked vegetable. At one time cabbage was not considered healthful unless boiled for at least an hour. Today, however, nutritionists advise not more than fifteen minutes' cooking time for quartered cabbage and ten minutes' cooking time for shredded cabbage. The short cooking preserves the fine flavour, appearance and nutritive qualities of the vegetable. This food supplies the dietary with important food substances, for it is rich in minerals and vitamins. Next to raw lettuce, raw cabbage contains more vitamin C than any other green vegetable.
