Housekeepers often become discouraged if their newly-made jelly fails to set the day after it is made. All jellies tend to become firmer upon standing. For this reason, a jelly that is soft and shapeless at, the end of 24 hours may be quite perfect within a month's time. Therefore, if your jelly fails to set immediately, give it the benefit of the doubt. Store it away for two or three weeks and then taste it. If, however, it is set, but still a little too soft to unmould, it often helps to remove the paraffin from the jelly and allow it to stand in a dustless place for a day or so before using, so thajt the excess moisture in the jelly may evaporate.
