PICNIC EGGS
Why do hard-boiled eggs so often emerge from, tho shelter of their shells with a disfiguring little green rim between tho yolk and the white? asks a writer in "Tho Queen." That is not at all necessary and spoils their appearance. The whole secret is to slip them into boiling water first, and when tho water conies to the boil again after being cooled by the cold eggs they should bo boiled gently for about ten minutes —more, of course, if there are more than three eggs in the pan. Ono small egg by itself takes eight minutes. If eggs are boiled too» long tlio whites become tough. Plunge them into cold water immediately and leave them there till cold. When the time comes tho shells will slip off easily, and there will bo no green rim to spoil their looks.
