There were 800 entries in the butter section and 425 entries in the cheese section at the.Waikato Winter Show, Which will be opened by the Prime Minister, the Rt. Hon. M- J. Savage, on Tuesday aftornoon. The butter and cheese sections were judged by graders of the Now Zealand Dairy Division, ■under Mr. W. Dempster, of Hamilton, the chief grader. Commenting on the butter section the judges said: — ,1 Butter Judges' Comments " An outstanding feature <3f the butter exhibits is tlio remarkable uniformity in the quality of the entries. Uniformity is paramount and it is apparent that this factor has been recognised and given effect to by the exhibitors. " The judges engaged found it a difhcult task to separate the prize-winners. A, feature that is worthy of mention is the true butter flavour and aroma that characterised many of the exhibits, and the absence of feed and storage flavours was favourably commented upon. " In the two classes for butter taken at random from the grading store, the quality was sound, and the majority had stood up well to storage conditions. This is an important factor as the first essential of a Njw Zealand export butter is that it shall keep. /' Out of the 800 exhibits staged for judging very few could be faulted for body, texture, salting or colour; which reflects great credit upon the skill of the makers. In no single instance was it possible to find an entry that was not of sound commercial quality." Features of Cheese Exhibits

The judges' comment on the cheese exhibits was as follows: — "As the past season has been a somewhat difficult one for many cheese makers, the number of entries in this year's show is slightly less than that benched for the pervious winter show, but nevertheless there is a very satisfactory entry of 425 exhibits. The general quality was fairly uniform and considering the season's difficulties in connection with .'starters,' exhibitors are to be complimented on the results attained. It was pleasing to note that mechanical openness was practically atsent, but slitty texture was apparent in a number of cheese. A pleasing feature in regard to flavour , was - the marked reduction in the number of exhibits showing- evidence of 'scorched' and 'bitter' flavour. 41 The exhibits in the class for fully matured cheese were of sound quality, but mostly lacked that degree of maturity which was looked for in a class of this description. With very few exceptions the cheese were benched in a clean and attractive condition. Attention has been previously drawn to the necessity of triihming the bandage neatly on the ends of show cheese and a little more care on the part of some exhibitors in this connection would lbe desirable from the /point of view of neat finish. The judges found it necessairy to penalise the points for finish in several instances, owing to insufficient attention to this important detail." Details of the Awards The awards were as follows:
