Velvet Pudding. —Sweeten 2 cups of milk to taste and set them in a saucepan on the fire to boil; when boiling add the beaten yolks of 2 eggs mixed well together with 1 tablespoon of cornflour mixed with a little water. Keep stirring about 1 minute till thick, then then add 1 teaspoon vanilla flavouring. Pour in a pudding dish. Put the whites of the two eggs_ beaten to a stiff froth on top, and slightly brown in the oven. Serve with fruit. Alexandra Frame. —Line a dish with slices of sponge cake and over this spread any jam you 1 ike. Make a custard bv stirring* together in a saucepan till thickened, 1 cup milk, 1 tablespoon sugar, 1 teaspoon butter, 1 dessertspoon flour. 1 egg, and a flavouring of vanilla. When cold pour this custard over the sponge and jam. and put on top of all a passionfruit cream, made by putting in a pan 1 cup sugar, i. cup water, the juice and seeds of 6 passion fruit, together with one dessertspoon cornflour mixed with a little water. Let all boil together for a few minutes. After pouring in the pass-on fruit- cream, let the dish stand until set firm, preferably in a cool place.
