POACHED EGGS AU GRATIN

ftggs poached in cheese sauce are quite a nice change from eggs poached in water. Make a good white sauce with 207.. butter, '207.. flour, one pint milk, a small teaspoonful salt, pepper, and a little mixed mustard. Stir in 2oz. finely-grated cheese. Pour half the boiling sauce into a well-greased casserole, break four eggs on top, and cover with the remainder of the sauce. Sprinkle thickly with grated cheese and place on the too shelf of a hot oven for five minutes. Served with a green salad and brown bread and butter, this forms a delicious and perfectly-balanced lunch or supper.
