WAYS OF PRESERVING MEAT

THIS WEEK'S CONTEST

The competition this week is for two methods of preserving vegetables (any kind) and two for preserving meat, including poultry or rabbit. Most women in these days feel that it is little less than a crime to allow food to be wasted, but not all of them save for future use what is superfluous when in season. In many gardens vegetables are allowed to seed and waste, but if the housewife will preserve them they are there for her use at times when ordinarily they aro unobtainable. The gain is obvious and so cheaply obtained. Preserved meat also adds variety to the diet, and with rabbits as plentiful as they are in many country districts it is a pity not to put them to good use. This part of the competition has been included by special request. COMPETITION No. 3 First prize, £1 Is; second prize, 10s 6d. Two Ways of Preserving Vegetables (any kind) and Two Ways of Preserving Meat, including Poultry or Rabbit. In addition to the first and second prizes of £1 Is and 10s 6d respectively other meritorious entries will be accepted at the rate of 2s 6d each and published. Competitors will assist by sending in their entries as early in the week as possible instead of toward the end.

The judging will be carried out by Mrs. A. M. Mann, lady demonstrator at the Auckland Gas Company's cookery department.

Recipes may be written or typed. If not typed they should be written clearly in ink on one side of the paper only. The liamo and full address of the competitor, including street and house number, should be written on a separate slip of paper. Entries should be addressed: New Zealand Herald, AucklafTd, and competitors are asked to write on the outside of the envelope, " Cookery Competition No. 3." They will ho received up to to-morrow evening and announcement of the winning competitors will be made on the following Wednesday.
