COMPETITION RECIPES

The following are among accepted recipes : Mrs. R. McComb, Tamaki Koad, Papajtoetoe: — > "Wholemeal Bread: —One cup milk, ono cup water, half ounce yeast, quarter cup >vater at 85 degrees, half teaspoon salt, half tablespoon butter, oue tablespoon sugar, about six cups wholemeal flour. Scald milk and water; when at 85 degrees add half ounce yeast dissolved in water at the same temperature. Add the butter, sugar-and salt and mix thoroughly. Add three cups of wholemeal flour and make a stiff batter. Beat well for five minutes, cover and put in a warm place (80 degrees to 90 degrees) for about two hours, or until the mixture is light and spongy. Stir in slowly enough wholemeal flour to make a dough. Turn out on to a floured board and knead for 10 minutes. Shape loaves and put in greased tins; cover and stand in warm place until double in bulk (about one hour). Bake in oven at 575 degrees. If electric, top element off, bottom element low. Time, about one hour. "Wholemeal Peanut Biscuits:—Half pound wholemeal, quarter pound butter, two ounces sugar, half cup shelled and browned 'peanuts, one egg. Rub butter into dry ingredients, add peanuts and mix to a soft dough with beaten egg. Roll out quarter-inch thick, cut into fingers, and bake in a slow oven till crisp. Wholemeal Banana and Raisin Pio.— Rub three ounces butter into six ounces wholemeal; add pinch of salt, and mix with cold water to a soft dough. 801 l out and line a pio plate. The Filling.—Take half pint milk, stir in one dessertspoonful cornflour, and put on to boil for three minutes, stirring all the time. Add one tablespoon sugar. Take off fire, cool a little, then add one beateD egg yolk, two sliced bananas and two tablespoons seeded raisins. Stir well and pour into pie plate. Bake in quick oven for 15 minutes; whip up the egg white till stiff, fold in one tablespoon sugar and pile on the pie. Then return to ovea till a golden brown. Servo hot or cold. Wholemeal Coconut Cakes:—Six ounces wholemeal flour, four ounces rice flour, six ounces butter, two ounces desiccated coconut, three ounces caster sugar, two eggs, one taspoon baking powder, a little milk. Cream butter and sugar, add egg well beaten, then flour, baking powder, coconut &nd milk. Put in paper cases or patty pans and bake in moderate oven.
