APPLES AND CINNAMON

Apples 21b., juice of two lemons, rind of one lemon, loz. cinnamon, one gallon water, sugar, cochineal. Wash apples and cut up without peeling. Place in a saucepan with cinnamon and rind and juice of lemons. lioil until apples are soft. Mash a n d strain off liquor through sieve. Add 4oz. s'igar to each quart of liquor; dissolve sugar slowly and then boil for a few minutes. Colour with cochineal, and cool. Iced, this is delicious.
