ECONOMICAL APRICOT JAM.

A very inexpensive and delicious apricot jam is made from dried apricots. To lib. of dried apricots allow two and a-half pints of water, 31b. of sugar, and two lemons. Wash the apricots ,in two waters. Put them into a basin with the fresh cold water, cover, and stand for twenty-four hours, or even longer. Then turn all into a preserving pan, add the sugar and the grated rind and strained juice of the lemons. Bring slowly to the boil, stirring all the time. When the sugar is melted boil, more quickly, until the jar will set, from twenty to thirty minutes. If liked, a few almonds, blanched and shredded, may be added to the jam.
