MEAT is now so cheap that to eat less of it is no economy. Few foods can compete with meat in price. Bread is 3d a pound, but so is gravy beef and several other cuts of beef. Buying second-grade meat is not really economical either. It means eating old or poorly-nourished meat, lacking in food value. No economy there. The only practical way to cut down your meat bill is to buy one of the inexpensive cuts of prime quality meat. A cut off the topside or brisket, braised, or a chuck pot-roast—from a prime ox will be both nicer and more nourishing than a sirloin roast from an inferior, under-nourished beast. You can't get good meat from inferior stock, no matter what cut you choose. That's why Hellaby's buy only prime stock. Remember, too, that though the inexpensive cuts of prime meat are unsuitable for oven roasting, they are just as nice as the expensive joints if cooked in the right way.
