CELERY WITH CHEESE.
When cheese is eaten at the end of a good meal its role is that of a digestive stimulant, and it should bo taken sparingly because of its high nutritive value. If this is not borne in mind there is a danger of over repletion. The custom of eating celery with cheeso is therefore a good one, because celery has a very low nutritive value when compared with the other vegetables. For example, a gram of celery contains 19 calories, whereas a gram of cabbage contains 32 calories. In fact, tho only . vegetable, ordinarily eaten, of a lower calorific value is the cucumber. At the same time, celery is bulky in proportion to its food value and cleansing in its effect, and we must not make the mistake of looking upon vegetable food purely from the point of view of gross nutrition. Tho vitamin value of this part of tho meal is just as important, and a certain quantity of vitamin C is found in celery.
