TO PREPARE GREEN SALADS.

Wash thoroughly, then let the salad remain in very cold water for at least an hour. Next drain well—in a salad basket if you have one—or in a colander. If you have a salad basket- shaking the basket, will dry the salad, but if you' have only a colander, put the salad in a clean linen cloth and shako lighllv: when one part of the cloth is wet, "put the salad in another part. Never cut salad in pieces, but pull it apart with the fingers.
