ABOUT BANANAS.
Bananas have a high food value arid Should, ha rcgnrdeU not as a fruit to be eaten occasionally but as a substantial food.
Because of the quantity in which they Inay be eaten, bananas aro a good source of vitamins. Bananas should be cut. not broken, from the stem, because as long as the skin remains intact the fruit is a sterilo food. Owing to the large amount of starch in bananas, they may on suitable occasions be used to replace potatoes. When bananas, are ripe, brown spots fcppear on tho skin and the starch they contain is changed into dextrine and B"gar, rendering them digestible. Unripe bananas are a pale, clear yellow, find the, starch in them is as indigestible as any other raw starch, consequently they should never be eaten unless they are cooked. , '
-Tho strings sometimes left on peeled pananas aro indigestible ancl should bo Jonioved, especially for children.
