Sir,—l congratulate "T. 8." on the moderate tone of his letter in your issue of the 18th inst., but unfortunately he evades the point at issue, namely, that overlapping is increasing the cost of production of butter and cheese, and the d.iiry farmer pays for it, whether manufactured by private or co-operative enterprise. When "T. 8." says that the dairy fanners cannot do away with overlapping ho is just, writing nonsense and is certainly not a friend of the daiiy farmer. I im entirely in favour of private enter'prise as opposed to Slate enterprise, but. certainly prefer co-operative enterprise in the production and manufacture of our butter and cheese. We get all there is in it then. As a matter of fact even in the case of some, if not all. private dairy companies they make progress payments on the raw material, and make a further payment according to the market prices for butter and cheese, though they are not bound to do this the same as the cooperative dairy companies. If the cooperative companies and private companies met and agreed to do awavitvith overlapping they would save thousands of pounds sterling for the dairy farmers, and those who say it cannot be done are not acting in our best interests. Let "T. 8." explain why it cannot be done. Our whole object should be to reduce the cost of production and manufacture consistent w'ith quality. This can be applied to butter and cheese and to other manufactured products. My idea is, do as much as you can, do it well and get as much a3 you can for doing it. J. W. McLarin..
