MUFFINS AND CRUMPETS.
[WINTER TEA FAVOURITES. jfuflins.—r.oil and Tiir.sh three large, mealy potatoes until very smooth, with about 2obutter and a little salt, adding sufficient warm water to mako it the consistency of very thick cream; well heat two eggs, n, ' x them in, and then stir to tlio whole three pin-fs of fine, dried, and sifted flour; mix these well together, and add a pint- of lukewarm water; then stir jn a small teaspoonfui of soda and a toacupful of yeast, and set. it to rise all night; the ne'xi morning bako the inuflins in rings on a girdlo. Crumpets.—'fake lib. flour, one teaSjioonftd hakim; soda, ono teaspoonfui cream of tartar, one teaspoonfui sugar, jlix to a tlough with buttermilk, and put into a hot greased girdle with a spoon. Ono egg is an improvement.
