MILK FOR FILIPINOS.
THE FILLED VARIETY. Filled milk has reached the Philippine Islands, the native habitat of the cocoauut cow. Practically driven from the markets of the United States as dangerous to public health because of its deceptiveness, fillen milk in new form has found a home in tne American possessions in the Pacific. It differs from the American domestic product in that apparently it is entirely of vegetable origin instead of a mixture of skim milk and cocoanut oil. The following glowing account of " Cocolait appeared in the Manila Daily Bulletin of November 17:— " Milk and cream at prices approximately the same as those charged in the dairying districts of the United States will be available to Mariilians beginning Monday, November 19. The source of the milk will be the Coconut Dairy, located on Calle Pureza, Santa Mesa. The new milk is a vegetable product, but is similar to cow's milk in appearance and quality, and has the same food contents in slightiy differing proportions. Its taste is unique, not to say delicious, and one who is not accustomed to drinking fresh cow s milk would to taste Cocolait, twice to distinguish' Ihe difference. Of course, there, is a taste of cocoanut, but it is so slight that it is hardly noticeable. " Cocolait, looks so much like cow's milk that it is difficult to distinguish the difference. After sitting for a time undisturbed, cream vises to the top. This cream can bo whipped the same as any other high grade cream. It contains fat, and butter can be made from it. It sours, as does fresh inilk, and, according to women who have tried it, delicious recipes can be made from it."
