SPECIAL RECIPES. Tomato and Apple Butter.—To 21 b. red tomatoes allow lib. apples, 1 pint sweet cider, -jlb. sugar, and a little ginger or other spice. Cut the tomatoes arid apples into slices without peeling, put them into a preserving pan with the cider and cook until reduced to a soft pulp. Rub them through a sieve fine enough to keep back the seeds. Return the pulp to a clean pan with the sugar, add a Jittle spice to taste, and stir over tin J.-etit until the mixture thickens and draws away from the sides of the saucepan. Pour into pots, and cover as for jam. This butter is delicious in sandwiches, or Sf-i'.ed with cream cheese for dessert. Picnic Rolls.—The small pieces of meat that can be cut from the bones of a cold boiled fowl will do very nicely for this dish, and if chicken is not available, rabbit answers the purpose just as well. Chop up very finely with Zoz. of fat baron, a little pepper and salt, arid moisten with a little gravy. Roll out some flaky pastry, cut into squares, put in some of the mixture, and finish as for sausage rolls. Brush over with egg, and bake in a quick oven for ten minutes. Pickled Figs.—Take firm figs. Prick with foik and steep in plenty of salt water for 12 hours. Wash, drain, and place in pan with a tablespoonful of golden syrup, and a few peppercorns. Cover with vinegar. Simmer slowly for half an hour. When cold, bottle. They are delicious with cold meats.
