STANDARDISED CHEESE
EFFECT ON BRITISH MARKET.
ADVICE BY MR. SINGLETON.
ADDRESS TO DAIRY MANAGERS

There was a largo attendance of delegates from all paVts of tho Dominion at
tho dairy factory managers' conference held in Wellington to-day. Mr. E. Fergusson, president, of the association, was in tho chair.
"Tho Now. Class for Cheese" was tho title of an address delivered by Mr. W. M. Singleton, director of the dairy division, Wellington. Mr. Singleton said that at the present time tho centre of discussion appeared to have switched over from cream grading to the manufacture of standardised cheese. Tho position now was that cheese, however it was manufacutred, must be exactly iruo to brand. Dairy companies had the option of making full cream cheese or standardised cheese, but were debarred from making part skim milk cheese and branding it as "full cream."
It was recognised that tho effect of the new brand of cheese on the British market had yet to bo determined, and that was probably tho most important objection yet. raised. Tho new brand permitted dairy companies to try out the market with a legally branded cheese, while it was also possiblo that, that might have some undesirable reflex action on tho price of "lull cream" cheese. But thero was also the chance that it might appreciate tho price of "full cream." In any case, it was deemed to bo in the interests of the "full cream" brand that they should not export as "full cream" cheese made from other than wholo milk. Tho disuse of a separated milk starter did, however, partake of the natux'e of a restriction', but it was (ho dairy companies which had been illegally exploiting tho brand "full cream," and they must carry tho responsibility for tho debarring of the use of the separated milk starter.
Mr. W. G. Wright, who was New Zealand delegate to tho World Dairy Conference, said tho opinion of people in England was that tho standard of New Zealand cheese and butter v/as deteriorating.
