Stewed Mushrooms. lb. mushrooms, milk to cover, pepper, salt, -\oz. butter, ioz. flour. Carefully wash tho mushrooms very well; let them stand for awhile in salted water. Skin them, leavo the stalks on, and put into boiling milk in a double saucepan. Stew till tender—about an hour; it depends on the age of the mushroom. When cooked, melt the butter in a pan, add tho flour, cook well together, stirring carefully; then slowly, still stirring, add tho milk tho mushrooms have been cooked in, and flavour well with salt and pepper. Put tho sauce into the double saucepan to the mushrooms and keep hot till required. To grill, place on greased gridiron, sprinkle with salt and pepper, and grill for 10 minutes, putting the outside to the fire. Do not turn them. Never eat warmed-up mushrooms. Any kind of mushroom is difficult to digest. Oarrot Cream.—Ollo tablespoonful of chopped cooked carrot, one gill of whito sauce (2OZ. flour, i,oz. butter, one gill liquid). Make a white sauce in a double saucepan, using ono tablespoonful of carrot water (a larger quantity would make it too sweet). Put the finely chopped carrot into the sauce, and let it simmer for at least half an hour. Season with pepper and salt, using plenty of salt to take away tho sweet flavour. Stir is a tablespoonful of crcain if liked. Creme Caramel. —Custard, loz. of sugar (granulated or castor), two tablespoonfuls water. Slowly melt the sugar in tho water, stirring well till dissolved, then leave it untouched to slowly boil and turn a rich brown colour. Pour it into a little china mould which is just aired, and keep turning it round till the whole is coated and set. Pour in tho custard, and steam as directed for custard. Turn out while hot, and servo hot or cold.
