It's not frozen, merely chilled in a temperature of 35° to 40°. This checks the natural change that begins in all meat immediately after it's killed, the change which, if it is not checked, makes meat go bad. Of course, even Hellaby's meat won't keep indefinitely. But it does keep as long as fresh meat possibly can, and far better than any other meat sold in Auckland, although it costs you no more.
