QUALITY OF MILK.
HINTS TO FARMERS. In his quarterly report, the Birmingham City Analyst, Mr. J. F. Liverseege, referring to milk samples bought from farmers, states that road-borne samples were distinctly worse than those which came by rail, says the Dairy. He remarks that while 14.b per cent, of the milk contained less than 3 per cent, of fat, the highest proportion in the second quarters during the past fifteen years, it is probable that part of the deficiency w- due to climatic conditions, the quarter being wet ~d cold, but it was remarkablo that 18.7 per cent, of . the milk from farmers was of excellent quality, containing 40 per cent, of fat and over. This figure was also the highest in the second quarters of the previous 15 years. Commenting on these 'facts, the city analyst states it would be rather strange if the climatic conditions increased the proportion of excellent milks at the same time as that of poor milks. A large proportion ,of the farmers who sent milk deficient in fat sent at the same time one or more churns of milk which was above the limit for fat and m many cases of very good quality. If cows are milked at approximately equal intervals thero will bo little difference tn the percentages of fat in thr morning and evening milks, but if the intervals are unequal, the evening milk will be richer £han the morning.
