BUTTER CONSUMPTION.
Butter consumption in the United States has increased nearly 50,000,0001b. during the first nine months of 1924 us compared with the same period in 1923, declares T. 11. Pirtle of the United States Department, of Ag«-iculture. The figures for the first nine months last year show consumption of 1,516,690,0001b. compared with 1,467,043,0001b. in 1923. Of the increased quantity of butter consumed approximately 18,000,0001b. is accounted for by the, normal increase in population. An additional 9,000,0001b. has been required through the, decrease of that much in the production of farm butter which must be replaced by creamery butter. Per capita consumption of whoie milk lias increased more than 23 per cent, in the past three vears, it is pointed out. Each person on the average in 1920 consumed 43 gallons of whole milk, whereas per capita consumption in 1923 was 53 gallons. Butter consumption during the same period has gone up from 14.71b. per person to 171b., and consumption of condensed milk increased from 61b. to 13.',1b. Only slight increases arc shown in the consumption of cheese and ice cream during the period covered.
