MANUFACTURE OF CHEESE.
PERCENTAGE OF MILK-FAT.
REGULATIONS IN NATAL.
Details' of regulations adopted by Natal in relation to 'the manufacture of cheese are furnished in a letter just received from the London representative of fch* National Dairy Association. The regulations provide that cheese shall contain at lea*t 40.per. cent, of milk-fat in its water-free substance. Cheese containing less than the specified quantity of milkfat shall be deemed to be skim-milk cheese and shall be labelled as such. Skim-milk cheese shall contain at least 10 per cent, of milk-fat. Cream cheese contain at least 60 per cent, of milk-fat. The regulations also provide for the proper labelling of the various kinds of The' officers of the Government Dairy Division stated yesterday that such regulations were not necessary in New Zealand, where only cream cheese was manufactured. No other variety of cheese would be accepted for export at the grading stores.
