I > Mill. Gruel.—Scald half a pint of milk, ' sdd six raisins, and allow to stand five pastes. Take a tablespoonful of cornfloi: • and thoroughly mix with two tablespoonful* of cold milk. Having placed the scalded milk in a fnrina boiler over the fire, add the cold milk and cornflour, stirring the whole backward and forward until it begins to thicken; then add loz of 'sugar and let it cook one minute. Strain, - and place in moulds in a cool place. •Milk Gruel with Oatmeal.— oatmeal, two tablespoonfuls; milk, one pint. . Stir the oatmeal smoothly into the milk. Then stir it quickly into a pint of boiling ' water and boil a few minutes until thickened. Add a pinch of rait and sweeten with sugar.
Milk Jally.—A-; a variation in milk diet, the following i.« recommended: Heat one quart of milk with lib of sugar, and, .when the sugar is dissolved, continue the heat at a boiling temperature for about 10 minutes, '.hen coo! well snd add, slowly J stirring, a sohiti- ■. if loz of gelatine in & cupful of. water. \£xt ?.id the juice of ~ ihree or four lemons. Four in*-o glnses and set in a cool p'.:.ce. It is necessary to have' the milk quite cold before adding the other ingredients, else it will curdle.
