cottage cookery stews do not seem to be in favour, yet with: a small piece of beef skirting, say, or trimmings of beef or mutton, if stewed gently for two or three hours with an onion, a carrot, potatoes, or rico, what an excellent dish can be mado I Only a small, fire is needed, and that favours economy. In cold weather, when funds are low, poor children could have a nourishing hot meal of milk thickened with flour and sweetened with treacle or with brown sugar. Even if skimmed milk' be;:used the. result is excellent.
