BUTTER OR CHEESE?
The secretary (Mr. Martin Butle) stated that if the manufacture of cheese were decided upon, it would be necessary to raise £15.000 extra capital, and that each shareholder should tako up 2£ shares for every one now held.
Mr. Dempster, of the Government Dairy Department, said the net average roturn for the Dominion for the past rive years was : Cheese, Is Id; butter, 10.87 d. He thought the difference between the two could be taken as a safe guide locally. Pressed to give their private opinions, each director spoke, their remarlcs all favouring a continuance of the manufacture of butter, mainly because the manufacture of cheese would necessitate raisingadditional capital, signing a further joint and several Oond, and increasing the expense of output, while it was also considered that the company's goodwill as a butter manufacturing business was a valuable asset not to be regarded lightly. . After a general discussion, it was unanimously decided to continue the manufacture of butter as at present.
QUESTION OF RELATIVE PROFIT. ' [from oije own correspondent.] ' Cambridge, Monday. ' A general meeting of shareholders of the ' Cambridge Co-operative Dairy Company ] was held on Saturday to discuss the ques- < lion of installing a plant for cheese-manu-facture. Mr. James Taylor (chairman of < directors) presided. About 40 shareholders < attended. Mr. C. C. Buckland, wrote ad- i vocat.vng the installation of a cheese plant, £ stating there was a reasonable expectation i of cheese regularly giving a return of from 15 to 25 per cent greater gross profit than butter.
