MR. GEO. KNIGHT'S BUSINESS. If the Biblical Commandment, Thou shall not kill," h#d been intended to apply to the beasts of the field, our Christmas faro would have been robbed of much that is tasty and satisfying. There would, as a matter of fact, havo, been none of thoso choice sirloins of beef, tender legs of mutton, or tender legs of lamb, which were seen by a Herald representative yesterday at the butchery establishment of Mr. Geo. Knight, Karangahapo Road, Newton. This is one ot the oldest established businesses of its kind in the city, and the proprietor has a wide reputation as a judge of stock, which faculty has doubtless resulted in the selection of such a good class of meat as to build up a well-founded and solid trade. Primarily, the establishment does a considerable cash business over the counter, and the Cleanliness which at all times characterises the shop and its contents is a decided force of attraction. The manufacture of small goods is also undertaken, and these find extensive sale. Another important branch of tho business is the delivery of orders to customers' residences, and quite a large staff of butcher boys is occupied in this work. Owing to the facilities which tho Jiroprietary has secured for the handling of arge quantities of stock, an adequate supply of meat is always at command, so • that customers are provided with a wide rango of choice- The presence of the Christmas season is inducing the management to put forth the usual efforts at display, and the establishment will bo found well to the fore in this respect on Christmas Eve.
