NEW ZEALAND BUTTER.
A MATTER OF MOISTURE.
COMPLAINTS IN LONDON.

New Plymouth. Sunday. Mr. Newton- Kino, the well-known merchant, and Mr. J. B. Connett, chairman of the Taranaki Producers' Freezing Works Company, have just returned from London, where they have been on a mission to raise £275,000 for New Plymouth Harbour Board. On being interviewed, Mr. King informed a reporter that he had had (little time to go into the question of dairy produco on the London market, but he managed to make one or two hurried visits to Tooley-street, where .he found New Zealand butter enjoyed an excellent reputation. There were many strong complaints, however, from merchants that Ney» Zealand butter ehowed fishing and this far more so than ueual. This, merchants at Home attributed to an excess of moisture. Rightly or wrongly, ' they blamed the combined churn and butter-worker for this. Whilst not wishing to create a scare, he said that this was a matter that demanded the close attention of dairy factory managers and directorates, for they were paying ocean freights on water and spoiling the reputation of their butter. It was a matter which could be easily reme- ' died, and should be.
Mr. Connett remarked that butter with excessive moisture seemed to be affected by the process of refrigeration, thereby becoming broken in grain. They were very well satisfied with the prices and the prospects of our butter on the Home market. As for cheese, the New Zealand article seemed to be in favour, and they heard no complaints concerning that.
