It was the revelations in Mr. Upton Sinclair's novel, "The Jungle,"' that induced Mr. Roosevelt to send commissioners to investigate the methods of the Chicago packing houses. Their report, which is of a sensational character, is the basis of legislation to be immediately submitted to Congress. The details published by the newspapers show that hogs dying of cholera have been converted into lard-grease, as a substitute for sardine oil putrefied hams have been chemically rendered odourless ; bad meat has been dyed, and '"'potted ham" made from mouldy beef; while cattle dying of disease have been converted into tinned beef. Sausages have been made from floor scrapings, and when the operatives have been mutilated in accidents the machinery was not stopped and lumps of human flesh became mixed with canned xoocl arid sausage meat.
