TO-THE EDITOR. Sib, —Aβ a visitor to your city I have read with some astonishment the letters relative to the price of bread m Auckland. The price is very much over that nsnally charged in the old country, while materials seem tobe quite aa low We as at home. If th« breadbakinß business shows such a profit aa has been put- forward by Mr. Pain (and he has not been contradicted byanyone in thg trade), there certainly seems an opening foe some independent firm or company to take the matter up. Breadbaking is a trado which can be very advaatageanslj; worked on a large scale, while the reverse ie the case when it is dene in a small way, as seems to be the case here. The subject is one of so much interest and importance to all classes that it appears worthy of careful investigation by the citizens.—l am, &c., Auckland, July 3, 1891. Cosmopoux4N.
