SACCHARINE. , THE NEW SWEETENER. Made from Coal Tar. under Messrs. FaHLBER* and List's Patent, and which is 30} time sweeter than Sugar itself. During the past two months, many of th leading Pharmacists of Britain have given grea I attention to this article, owing to its value ii medicine as a Dietetic Sweetener, it having bee: proved to have no effect upon diabetic and gout; subjects. Not only is SACCHARINE invaluable in a] pharmacy, but also in all domestic uses, Frui Preserving, Brewing, Wine Fortifying, Tobacc Sweetening, Mineral Waters, Syrups, Essences, &c. and every day fresh uses are developing. SACCHARINE is, in addition to its Sweetenin, Qualities, a Good Antiseptic, and is unfermentabl and uncrystallisable, hence it has advantage possessed by no other products. For instance, i: pharmacy in all cases where sugar is used only as flavouring agent—as in Syrup of Phosphate of Iron ' Easton's Syrup, &c.—in many of which the grea difficulty has been to prevent crystallisation. In a] disagreeable compounds, such as mixtures contain ing soda, salicylate, cascara sagrada, quinine, <fcc. it lias great power in covering the objectionabl tastes. IN DOMESTIC USES, for all purposes in which sugar is needed as I sweetener, it is invaluable, as it cannot possibl affect the system, and may be used by everyone irrespective of age or condition ; is inocuous in i grain doses daily, having no effect even on th appetite or digestion. Half to ljgr will sweete a cup of tea or coffee. It retards fermentatic where sugar would promote it. One of the large; confectioners in England is now using it in the lozenge factory. FRUIT PRESERVING. Being an antiseptic, all that is necessary is to pi the fruit in a jar or bottle, using either a solution < Saccharine or a solution of glucose sweetened wit Saccharine, and the original character of the fru is not damaged. JAM MAKING. It will not be necessary to boil in order to make keep, and no crystallisation will take place, and tl fruit instead of being all mashed up will be in tl original form. The cost will be about the same ; using sugar, but no loss will be caused by the scu which always rises under the present system. BREWING. This is important. A London Arm has just settlf a*monopoly which will cover 40 million barrels [) beer. From the fact of it being unfennentable, cannot be used for making worts, but as a sweeten or purifier after the beer is brewed. Beer sweeteni with Saccharide will not fret, and is not affected 1 temperature. WINE FORTIFYING. Wine may be sweetened without fear of ferine tation, and a saving at least of 50 per cent, affect. E in the amount of spirit necessary to preserve t! wine after the addition of the sweetener, if Sa charine is used. Wine thus fortified can be import' into England at the lower rate of duty payable i French wines. It is believed that if Saccharine used, the addition of spirit will be only required j,, keep the wine bright when diluted, and not as preservative as at present. SACCHARINE. being fully 300 times sweeter than Cane Sugar it possible to detect the sweet taste when one part I dissolved in 70,000 parts of distilled water-i.e., o ' grain per gallon.
