It can bo obtained at most of the lending grocers in Auckland and Suburbs in seven pound bags and upwards, and brown bread made from this meal from the leading bakers. la making the orridge, the water should be boiling before the m al is put In. Auckland, Sir —At your request I obtained a sample of you Porridge Meal from your Mill on the 31«t ult,, and have examined it with the following results :— Analysis : Moisture 12 - 85 Soluble Albuminoid* 110 Sugar, Gum, and Dextrlnes.. .. 51& Gluten 7-06 Cellulose 268 Starch and Fat .-70 30 Ash .. -93 100 This sample was produced entirely from wheat, and these results show the preparation of a valuable article of food, from which a large proportion of the bran has been removed. The nitrogenous matter ii present to a greater degree than it would be in flour prepared from this wheat, while the retention of the germ of the meal adds greatly to its value as a flesh-producer, owing to the largo amount of albuminoids thus retained. The ash is heavier than in ordinary wheat Hours, and as this is chiefly composed of phosphates, which are very important as bone-forming materials, it will be seen how beneficial this food will prove to children. lam of opinion that this preparation will provu of gi eat value, but to ensure its eaity assimilation by the system it will require care in cooking, and will need at least thirty minutes at a boiling temperature to attain th}s esult. 1 have &c, A.
