THE CAMBRIDGE CIDER MILL.
Mr. Chablis Jarbktt writes as follows :— "I trust you will give insertion to the following contradiction to some statements made by your Cambridge correspondent respecting my cider mill. First, lam reported to have obtained eleven gallons of cider from 1301b of apples, and as a oertain quantity of water has, of course, to be added to the juice, cider mills should be able to afford a larger price for apples." The lot of apples in question was an exceptional one, and from the average quality of fruit not nearly so good a return can be made, and not one single drop of water is added to the juice. Then as to the cost of a mill. Mine is not a Devonshire mill, and before purchasing it (it is a Worcestershire mill) I made enquiries as to the price of a Devonshire mill, and found that a complete plant, mill, press, oloths, eto would coat £69 in England. As to the lowness of price given for apples, all from whom I have purchased are thoroughly satisfied, and ia the present condition of the apple orchards, through the ravages of the oodlin moth, the cider mill is regarded as a boon to the neighbourhood. With regard to your correspondent's remarks about every settler having his own mill, I think he is again astray. When I imported mine, it was my intention to travel it round the country, crushing the apples at a small oost for thoee who wished to make their own cider; but the making of oider involves the coat of constructing cellars, and the risk of spoiling the article if not properly attended to, and the settlers aay we will sell you the apples, and buy the elder from you, In preference to making it ourselves. Your correspondent also aaaumea that the prioe of cider will be as high as that of beer. I may state that the average yield of cider has been eight gallons to the 1301b of fruit."
