T Was met with the reply that such doalers must cither give light weight or use Canterbury flour. My baker never, he said, need the inferior flour that ornes from Canterbury grown_ wheat. Nothing but the best Adelaide flour went into his oven, "of course if I did not mind risking the health of myself and family I could indulge in a cheap loaf, but only he informed me at such risk. Now, sir, I am told by friends that remonstrances on their part have led to exactly similar replies, and one party in talking the matter over suggested the idea that I should writo to the paper and enquire ■ whether there is really any considerable importation of Adelaide flour into Auckland at tho present tims, or whether there has been for some little time past. He is sceptical enough also to suggest that the loaf whether charged 6d. or sd. is equally made of the one flour, that made from Canterbury wheat, and j that the cry of the cheaper loaf being unwholesome j issimply a bugbear to scare tho»o who can pay into giving another 15 per cant, profit to the baker. The question admits of another consideration, and that is if New Zealand grown wheat is really so inferior the sooner our farmers give up all idea of cultivating their land the better.—l am, &c., Paterfamilias. !~The principal stock of wheat at the Auckland chills, at the presont. moment, is, we believ, Canterterburv grown grain. Tho flour made from New Zealand grown wheat may not equal that made from wheat grown in Adelaide, neither does the flour made from Knglish grown wheat, and yet if rre reoollect rightly English grown flour makes good bread, and uo will New Zealand grown flour also, whether grown in this Province or in Canterbury. —Ed.
