THE JERUSALEM ARTICHOKE
The Jerusalem artichoke does not come from Jerusalem and is not an artichoke. It is a Canadian and is related to the sunflower, previously called “girasol” (turning to the sun). This afterwards became corrupted into “Jerusalem” as part of the new plant’s name. To this “artichoke” was added because the first Frenchman who tasted it thought it was something like the familiar globe artichoke.
