MILK BISCUITS For these you will require half a pound of self-raising flour, two tablespoonsful of sugar, a piece of butter the size of a small egg, a good pinch of Rail, and about half a cupful of milk. Mix tho flour, sugar, and salt together in a basin, and put tho milk and butter in a saucepan to warm. When the butter has melted, pour the hot liquid gradually into the flour, and make a stiff paste. Roll this out on a board till it is as thin as possible, and cut it into rounds with tho top of a tumbler. Cook the biscuits on grease-proof paper for about twenty minutes in a moderate oven. If milk biscuits are made without sugar, and the milk is used cold, they are delicious with cheese. In this case, they should be cut into squares and made a little bit thicker.
