BANANA COCKED FOR AN INVALID.
If vou prepare a banana in this, a doctor's you will find it very pleasant in flavour, and safe for the most delicious digestion. Take a banana that is neither ripe, nor in any way tough. Skin and scrape free of all stringiness. Make a syrup with a cupiul of hot water and half a cupful of granulated sugar, with a little orange juice to flavour, and pour it into a shallow porcelain dish. In this bath of syrup lay your banana, and bake it in a fairly hot over for twenty-five minutes, turning the fruit ■nee and basting it frequently. When it has a clear, transparent look the banana is done. Remove the fruit from the syrup, which latter is returned to the oven to cook down to a jelly. Pour this over the banana, and serve it very cold.
