ECONOMICAL DISHES.
— Curate's Pudding. — Two eggs, their weight in sugar, butter ,flour, and orange marmalade. Beat oggs and butler separately, then together; stir in Hour, sugar, and, lastly, marmalade chopped fine. Steam three hours . — Stewed Shin of Beef. — Two pounds of shin, put in jar with one large onion and three cloves, .enough water to well cover. Fix on lid tightly, and stew gently for three hours, stirring Occasionally. About ten minutes before servjug add flour to thicken, seasoning, and a little gravy colouring. — Apple Rice. Boil teacnpful of rice with milk and water till tender, then add yolks of two eggs. Stew sufficient apples, sweetened to taste and flavoured with lemon, to well (over rice, which put in pie-dish and bake for about a quarter of an hour. Whip up whites of eggf till still", pile up on top of pudding, and slightly brown in oven.
