Dr. Schatzmann, President of the £w!sb Experimental Dairy Station, in a recent treatise on "The Preparation and Use of Rennet fjr Cheesemaktng," remarks :— ln the directionof cheese making, the most important step in advance is the production of a pure extract of calf rennet that can always be depended upon, and is not liable to spoil by keeping. It hss been brought into the market by Chas. Hansen, of Copenhagen, and its value is best proved by its rapidly increasing consumption. EUROPEAN AND AMERICAN DAIRYMEN RECOGNISE ITS EXOELLENCE. In most of the leading dairies of Europe the Fxtbact has substituted rennets ; it being now used on a large scale in England, France, Holland, Germany, Switzerland, and the Scandinavian countries. ORDINARY SINGLE TICKETS issued on Saturdays ami Sundays are available as bet urn Tickets until the end of the following Monday, when re- dated as above. ALL TICKETS used for return later than the day of issue must be presented at the Ticket ,Wind6V, and re-dated before the Passengers enter the Train for the return Journey. Any Person neglecting to get his Ticket re-dated will have to pay the ordinary Fare. RETURN TICKETS for distances not exceeding 25 miles are available on day ot issue only. RETURN or PERIODICAL TICKETS will not be available for Special and Excursion Trains, except when the Ordinary Time Table is suspended. Passengers can be booked at Stations only on condition that there is room in the Train. Children under three years of age travel free; above three and under fourteen years of age half fare. LUGGAGE.— Each Passenger is allowed to take Il2lbs. of PERSONAL Lujrgage free (not including merchandise of any kiad), and lor every 561b8. aboge this weight, for every 50 voiles or fraction of 50 miles, the charge will be One Shilling. No luggage will be allowed to be taken into the Carriages, unless of such a size that it can be placed under the seat without inconvenience to other Passengers. Patsengtra are strongly recommended to have their Names and the Station to which they are. proceeding distinctly marked on their Luggage, and to satisfy themselves that it is placed on the Train, as the Railway Department will not be responsible unlesß it is booked and paid for, | W.
