POTATO MOULD.

This is an excellent way of using up cold boiled potatoes. Boil an onion for ten minutes, then drain and chop it finely with a sprig of parsley which has been dipped into boiling water for a minute or two. Put a pound of potatoes through a sieve, and add the chopped parsley, together with pepper, salt and two ounces of grated cheese. Melt an ounce of butter and add it to the mixture, then stir in a well-beaten egg, and a little milk if the potato does not seem light and soft by this time. Beat well, put the mixture into a greased dish, not too deep, cover the top with breadcrumbs, grated cheese, and small pieces of butter. Let it get thoroughly hot in the oven for about 20 minutes, and brown the top under the grill if necessary.

After cleaning pictures, test all the cords before putting them up again, and if they are at all weakened put new ones.
