To-day’s Recipe

ORANGE TAPIOCA PUDDING Three cups water, $ cup quick-cook-ing tapioca, 1 cup granulated sugar, £ teaspoon salt, 2 cups orange juice, 2 tablespoons grated orange rind, 1 cup whipped cream. Place water in top of double boiler and bring to a boil over direct heat, combine dry ingredients: add gradually to water and bring to a brisk boil, stirring constantly. Place immediately over rapid boiling water and cook five minutes, stirring occasionally. Remove from boiling water. Mixture clears and thickens as it cools. When cool, add orange juice and rind. Add whipped cream to mixture, blending well. Just before serving garnish with orange slices. Serves 8 generously.
