SCREEN ACTRESS’ TEST
The test of a good cook, according to Miriam Hopkins, the screen actress, is whether she can make a perfect chocolate pic. Miss Hopkins, who is mistress of three establishments —an apartment in Hollywood, a beach at Malibu, and another house in New York—invariably asks a new cook to bake her a chocolate pie. If the crust is flaky and the filling melts in Miss Hopkins’ mouth, the cook is engaged. This is how Miss Hopkins’ present cook makes a perfect Chocolate Cream Pie.
Three squares of chocolate, 2£ cupfuls of cold milk, i tablcspooufuls of Hour, 1 cupful of sugar, 1 teaspoou of salt, 4 egg yolks (beaten), 2 tablespoonfuls of butter, 2 tcaspooufuls of vanilla. Scald milk "with chocolate. Beat until the mixture is smooth. Combino Hour, sugar and salt. Add to egg yolks. Pour small amount of chocolate mixture over egg mixture, stirring vigorously. Return to double boiler and cook until thickened, stirring constantly. Add butter and vanilla, and cool. Then pour into baked pie shell and cover with meringue or whipped cream.
