Candied Peel

When candied peel is made at home it is always fresher, and the process is simple. Divide four oranges into four quarters each (or more according to the quantity desired) and remove the peel. Cover the rinds with warm water, and simmer until they are soft. Then- cut the rinds, ■ carefully, scraped of ail white particles, into thin shreds. Cook the shreds for ten minutes in a syrup made from two parts of sugar and one part of'water. - Finally- dredge with fine sugar and'store iu airtight bottles.
