ONION-STUFFED APPLES To be served with roast pork, instead of tko customary apple sauce. Pare and core six tart apples. Place in a pan three tablespoons of bacon fat, add three-quarters' of a cup of chopped onion and saute to a delicate brown. Season with salt and pepper and a little sugar. Add half a cup of soft bread crumbs to the mixture and fill tho apple cavities. Sprinkle apples lightly with suga'r and bake till tender. FIG PASTE FOB BOUNDS Ingredients: One pound figs, quarter pound preserved ginger, juice and grated rind of lemon. Method: Wash the figs, and cut .1 small pieces and put in a saucepan. Chop the ginger and add with tho syrup and enough water to barely cover. Simmer until tender, or until it forms a paste. Add tho juico and grated rind of lemon, and mix well, also a little powdered sugar if needed. FIG BOUNDS Method: Cut piece of sponge cuko in rounds and cover with a layer of the above paste. Put a marshmallow on top, stuff with almonds which have been dipped in syrup. Put in the oven, long enough to melt, and slightly brown tho marshmallow. Serve plain or with whipped cream.
